ORGANOLEPTIC DESCRIPTION

Guatemala Tz'ikin

Our new specialty coffee addition is a Guatemala from Huehuetenango with a washed process. And we find pronounced notes of milk chocolate, caramel and stone fruit, such as peach and apricot. It has bright acidity, medium and creamy body, and a sweet and persistent aftertaste. 

THE NAME OF "TZIKIN"

Tz'ikin is the Mayan nahual (spirit animal) that protects the earth. 

It is defined as the intermediary between the force of Mother Earth (magma), the Father (the sun) and humanity. 


CROP

The unique location of the Huehuetenango region, which brings in hot air from the west and cool air from the north, helps produce the dazzling acidity and bright fruit notes so beloved in the region's coffees.

HARVEST AND POST-HARVEST

Due to its remoteness, most producers process their own coffee at home, usually using the washing method. 
They selectively collect the cherry and pulp on their farms.
